Using some of Berkshire’s finest produce we’ll show you how to prepare and cook various types of game, highlighting its versatility and health benefits. Before long you’ll be ‘breaking down’ a haunch of venison, using pheasants in different ways and cooking game birds to perfection.

In the Woodspeen kitchen, we consider the secret to a great sauce, gravy or soup is the stocks.  Stocks form the foundation of all great kitchens and add a depth of flavour to your dishes.  This course teaches you to understand the importance of stock and how a sauce can impact your cooking. Once you have a great stock, fresh soups, sauces and risottos are quick and easy to make.

Know what great fish looks like? We'll show you how to identify quality fish, ensure you know what to buy, when and how you want it. This course will teach you preparation and cooking techniques of flat and round fish, shellfish and molluscs; ensuring maximum eating quality and flavour.

At The Woodspeen we believe that a good understanding of traditional butchery skills give the cook an advantage for getting the most out of each cut. Just as important as the skill to prep is the skill to cook and we will run through time and temperature to cook your meat perfect every time. From keeping your stews and casseroles tasty with the meat being moist and tender, we’ll be breaking down chicken, duck and lamb, explaining the cuts as we go along and the best cooking methods to use.

Advanced Bread – Sourdough & Sweet Dough

When you’ve got the hang of the basics, try this more advanced course. 

We’ll talk about different flour types and give you some practical tips on how to make sourdough, ferments, and different shaped breads.

Learn the basics with us, and before you know it, you’ll be whipping up classic and modern breads, from traditional soda bread to shortbread. Or if you’ve already mastered those, you might like to try our Advanced bread, sourdoughs and sweet dough course.

Here at The Woodspeen Cookery School we will show you how to produce restaurant standard desserts just as easy as the classics, while our tips on creative presentation will give you that finishing edge, our hands-on day will give you the opportunity to learn many techniques whilst making several desserts

Valentines Dinner for Two

Leave the pots and pans with us, all you need to do is get the wine and flowers. 

With us at the cookery school you will prepare and part-cook (ready to finish at home) a romantic three course meal for you and your Valentine, including bread and petit fours. Making the Valentine’s evening relaxed and enjoyable for you both.

Mother's Day Bouquet Cupcakes

A super-fun class baking and decorating to produce a stunning (and delicious) cupcake bouquet, perfectly timed for Mother’s Day. 

This is an intensive course to introduce you to multiple techniques, which will really provide you with endless tips and tricks for perfect cupcakes. We’ll provide all of the ingredients and equipment required, and take you step by step through producing your own show-stopping ‘bouquet’. We will keep up your energy levels with tea, coffee and cakes throughout the session and you’ll take home your fabulous, gift wrapped arrangement of cupcakes at the end.
