About this class
Learn the techniques behind proper Thai and Indian curries, from building a paste to balancing heat, salt and acidity. You will cook a range of dishes designed to be repeated easily at home, covering marinating, spice handling and alternative cooking methods.
The class runs in our purpose-built cookery school at Woodspeen, near Newbury in West Berkshire, and finishes at the Chef’s Table where you eat what you have made.

- Indian curry with chicken
- Dry rubs and wet marinades
- Fail-safe oven-baked rice
- Aromatic salad
- Carrot bhaji
How the evening runs
- Arrive at 5.15pm for tea or coffee and the course introduction
- Cook alongside one of our senior chefs
- Sit down to supper of curry and accompaniments, with a beer, glass of wine or soft drink
- Finish at 9pm
